An egg stew is what my mom would make on days when my dad did not have money to buy meat or fish for the family supper. It was a must that my father showed up with fish or meat right after work every day for the family supper. A few times my father showed up with nothing and he say to my mom that he is broke. On such days my mom got into action right away to come up with a recipe for our supper. On most of those occasions, she often picked a few eggs from the laying hens and comely made two egg recipes from them. All I can say we still had a delicious supper at the end of the day and went to bed satisfied and happy. Let’s learn how to make the delicious Ugandan egg stew.
Recipe 1
Ingredients used in making delicious Ugandan stew
Egg
5 eggs
2 onions
1 carrot
2 tomatoes
1 green pepper
1/3 a cup of water
How to make the delicious Ugandan egg stew step by step
Preparing the ingredients
Finely chop your onions, tomatoes and green pepper, and set them aside
Beat your eggs into a bowl and whisk them to mix them well.
Add the water to the eggs and mix them well
Salt the egg mixture to taste
Cooking the egg stew
Place a slightly deep frying pan on a moderate to low source of heat. Add vegetable oil and let it heat up. You add the onions and wait for a minute or 2 for them to become soft.
Now add the tomatoes carrots and green pepper and let them cook until they are soft.
Now it’s time for the eggs, pour them over the ingredients in the frying pan and cover. When they start boiling, keep stirring them to prevent them from sticking to the bottom of the saucepan.
Cook your eggs for five minutes, add in water for more soup or more salt if the seasoning is not right.
Serve the stew with Kalo, rice or your favourite food.

Fried egg and pasted ground nut delicious ugandan egg stew
This is the second egg stew that my mom often makes at home. It is quick to make and super delicious. This stew is made using groundnuts. Find out more about Ugandan ground nut stews from my previous write up.
Ingredients for the egg and ground nut stew
Egg
5 eggs
2 onions
1 carrot
2 tomatoes
1 green pepper
1 cup of water
4 tablespoons of Groundnut paste
Preparing the ingredients
Finely chop your onions, tomatoes and green pepper, and set them aside
Beat your eggs into a bowl and whisk them to mix them well.
Salt the egg mixture to taste
Divide your onions into 2 portions and add some to the egg mixture.
Frying the eggs
Place a non-stick frying pan on a moderate source of heat and add vegetable oil to it. Pour some of the egg mixtures onto the frying pan and wait for it to stop sticking and flip it over. Let the other side cook. repeat this process until all your eggs are cooked.
Making the ground nut stew
Mix 4 tablespoons of groundnut paste with water and stir until it fully dissolves in the water. Warm water will dissolve the paste faster than cold water.
Add 1 medium cup of water to the solution and place it on medium to low heat. And start stirring frequently to prevent the groundnut paste from sticking to the bottom of your cooking pot. Note that the ground nuts will immediately start burning after they stick to your pan.
Cook the stew until it starts producing oil on top, you can now cut in your onions and add salt to taste. Wait for more than five minutes or 10.
Add your fried eggs to the groundnuts stew and let them cook together for 10 to 20 minutes on low heat to let the flavours mix. This stew is favourably enjoyed with Ugandan Kalo or white rice.
