The Ugandan egg roll is entirely different from the famous and widely renowned Chinese egg roll that traces its origin from China. The African egg roll as its most often referred to is composed of a boiled egg and varying ingredients around the egg. In Uganda, the boiled egg is wrapped around a mass mashed Irish and deep-fried while in Nigeria the boiled Egg is wrapped around a mass of dough and deep-fried. - Egg Rolls should be deep fried at medium heat. This is because Ugandan egg rolls are wrapped around a mass of Irish. Frying egg rolls on a high heat will prevent it from cooking on the inside.
- The egg rolls should preferably be completely submerged in the oil for better results when frying
Ingredients for the Ugandan egg roll recipe
6 medium-sized potatoes
5 large eggs
1 Cup of Bread crumbs
1 Tsp black pepper
1 Tsp. Curry powder
1 Tablespoon of Margarine
Salt to taste
Vegetable Oil for frying
HOW TO MAKE UGANDAN EGG ROLLS STEP BY STEP
The Irish Potatoes
Peel your Irish potatoes carefully to remove all eyes and spots
Wash your Irish potatoes clean preferably over running water
Dice the Irish potatoes in half and place them in a cooking pan and add just enough water needed to boil them.
Place the cooking pan over moderate heat and bring the potatoes to boil for 1 to 20 minutes. Over boiling is not advised as the potatoes will start to fall apart.
Remove the potatoes from heat and drain them immediately, then set them aside to cool.
The boiled eggs
Bring 3 eggs to a boil over moderate heat the yolk is hard for 15 to 20 minutes. Remove the eggs from heat and drop them into a bowl of cold water to cool down.
Beat the remaining two eggs into a bowl, add a pinch of salt and mix well and set it aside.
In a large bowl mash up the Irish potatoes, add margarine, salt, black pepper and curry. Keep mixing till there are no lumps visible in the potato dough.
Peel the eggs the boiled eggs using your hands and place them on a platter.
Making the Ugandan Egg roll
Using g your hands, gently add the mashed potatoes around the boiled egg slowly building your egg roll is around and palm-sized ball.
Make more rounds around the egg roll with your hand to ensure the ball is firm.

Repeat the process by rolling the egg roll through the whisked egg and the egg do this for the rest of the eggs till you have all your egg rolls ready. Set them aside and prepare to deep fry them.
In moderate heat, place a cooking pan and fill it with oil that is deep enough to submerge the egg rolls.
Fry the eggrolls over moderate heat and keep turning them until they are golden brown on both sides.
Remove the egg rolls from the saucepan and let them cool down.
