Ingredients For Mushroom Stuffed Chicken Breasts.

These are the ingredients for a mushroom stuffed chicken breasts recipe;

2 tbsp Vegetable cooking Oil

Brown mushrooms

2 cloves of garlic minced

4 chicken breasts, skinless and boneless

Kosher salt and ground pepper to taste

1 tsp Onion powder,

1 tsp Italian seasoning

8 slices of Mozzarella cheese

Ingredients for the creamy sauce for the stuffed chicken breasts

Gluten-free flour or any other flour

1 cup of Almond milk/ butter reduced milk

Finely grated fresh Parmesan cheese

Fresh chopped parsley, to garnish- so this is optional

Kosher salt and ground pepper to taste

2 cloves of garlic minced

½ a cup of finely grated parmesan cheese

1 tsp Dijon Mustered


Cooking the mushrooms

Heat 1 tablespoon of vegetable oil over moderate heat in a thick based non-stick frying pan that is wide enough. Add the garlic and mushrooms and Sauté while stirring occasionally until mushrooms are soft and tender.  Season them lightly with salt and pepper and then set them aside in a bowl together any juices that might have been produced.

Getting the chicken breasts ready

Cut through each chicken breast lengthways to create pockets. Season each of the chicken breasts with salt, pepper, and seasonings on both sides and inside the pockets too. Next, Stuff the chicken breast pockets with mozzarella cheese slices and the sautéed mushrooms, then seal with2 to 3 toothpicks. Any leftover mushrooms will be added to the creamy sauce.

Cooking the stuffed chicken breasts

Heat the thick based nonstick frying pan again on moderate heat and add in the remaining vegetable oil. Add the stuffed chicken breasts and sear them until golden on both sides. This process will take you about 6-8 minutes in total. Set aside on a plate when both sides have become golden brown.

Making the Chicken Sauce

To the same thick based frying nonstick frying pan, add the minced garlic and cook it over medium heat for 1 minute, or until it gets fragrant. Add in the flour and mustered, and whisk them together.  Pour in the milk little by little while whisking after each addition to incorporate them together and form a thick sauce with no lumps. Then stir in the ground parmesan and season with a pinch of kosher salt and black pepper. Add the remaining sautéed mushrooms and juices and let them cook together for a minute.

Mixing the cream sauce and the chicken

Now add your seared golden chicken breasts to the frying pan and spoon the creamy sauce over the chicken. Cover the frying pan and cook the mixture over low heat for about 15 minutes. Then finally garnish with freshly chopped parsley and serve it warm.
